Egg Salad

Simplicity, simplicity, simplicity is what food in the summer is about. It’s too hot and too beautiful outside to be worrying about your food, so we tend to migrate toward cool, easy foods to prepare. An easily forgotten one of these foods is egg salad. Take one egg, mash it with a fork, add about one tablespoon mayo, and one tablespoon of mustard, a few dashes of paprika, and put it on bread. It takes me under five minutes, and it is equally satisfying as it is healthy. I paired mine with refreshing foods: green grapes, and an avocado salad from the Barefoot Contessa.
